Linguine is a type of long pasta made from durum wheat semolina.
Belonging to the same family are the trenette shaped pasta  (in Genoese "trena" means "strings") originating from Genoa.
Unlike spaghetti, which are round, linguine is flattened in shape.
For our linguine, we use only Altamura durum wheat flour which, thanks to its low glycemic index, makes the pasta more digestible.
How to dress them? A tasty sauce is ideal!

As previously said linguini are a typical pasta shape of the Ligurian arch, which is why we find them as a typical regional dish, seasoned with Genovese pesto.
